I love sour cream.

I just generally appreciate eating. I like food. I like delicious food.

This is somewhat disturbing, but my father used to eat sour cream bread (yep, it is just like it sounds: cold sour cream spread on untoasted, sliced bread). I thought at the time, that this was the most delicious snack in the world.

I’m going to go out on a limb and say that I was wrong.

But, I still love the sour cream. I love it when it is thick and rich and cold and served on something spicy and hot. When I think of sour cream I think of Chipotle's three soft tacos (carnitas, corn salsa, sour cream, lettuce, and cheese). Creamy cold sour cream with the spicy peppers, the salty meat, and the sweet corn and crunchy lettuce… really, folks, you can’t go wrong.

I’ve always wanted to open an ice cream shop.

I’ll be honest. I’m really hungry right now.

But, I am glad that the Lord created food for us to eat. We have to do it; it is a necessary function for us to live. Yet, it is also desirable and good. I know that there are many ways that we have managed turned this good gift into something perverse (as we have with most good gifts).

We are really only hurting ourselves when we take fine, innocent grain and sugar and smash it up with various chemicals in order to package it and let it sit on the counter forever. I like a good Double Stuff Oreo ® as much as the next guy, but lets just be honest about how much “cream” is involved in the cream filling.

Eating or not eating food ends up being the out-playing of a large number of other issues. But in a country like this, where food abounds, where it does not even occur to us how necessary it is for life, and in a day like this, where the highest goal is the lowest weight. I think its ok to remember that the Lord created this earth and it was good.
